Louisiana Seafood for Life Contest is Live

It’s delicious and nutritious! Louisiana seafood can be low in calories and fat, given its preparation. That’s why the Louisiana Restaurant Association (LRA) is partnering with the Louisiana Seafood for Life campaign to encourage restaurants and chefs statewide to submit their healthy seafood recipe.  And the payoff for you can be significant.

“We take for granted the healthy benefits of Louisiana seafood,” said Ewell Smith, Executive Director of the LouisianaSeafood Promotion and Marketing Board. “Our seafood is an outstanding source of lean protein and omega—3’s.”

The Louisiana Seafood for Life contest is already live with just a dozen restaurants participating, but it’s certainly not too late for you to submit your healthy seafood option. Chefs are invited to create a healthy menu item using Louisiana seafood as the primary source of protein, then enter their recipe and information into the form here. Recipes must be under 600 calories and less than 20 grams of fat per serving.

With the bounty of Louisiana seafood – finfish, shrimp, crabs, alligator, oysters and crawfish—the opportunity for you to showcase these ingredients in a creative and good for you way can pay off big time.

By submitting your healthy Louisiana seafood menu item, you are entered in the contest. The winner is determined by the recipe with the most “likes” on Facebook, now through November 31, 2012. You can drive traffic to your recipe through your social media channels and engage your followers to support your submission.

“The recipe with the most ‘likes’ at the close of the contest will win a $10,000 to launch your own advertising campaign for your restaurant,” said Smith.

Ralph Brennan, of Ralph Brennan Restaurant Group, has embraced the contest with each of his restaurants and taken health and wellness to another level. He challenged his staff to trim down at his four New Orleans area restaurants in a 90-day competition, with his personal goal set at losing 20 pounds.

Restaurateur Jim Urdiales of Mestizo Restaurant in Baton Rouge is excited to participate in the contest and generate some exposure for his six healthy menu items, which he’s been serving for two years.

“When people think of eating better, Mexican food is usually one of the first things on the list to go,” said Urdiales. “Two years ago, we developed the Mexican Stir Fry for a customer who wanted to eat better, with less butter, fried ingredients and starches. It’s been really popular.”

When he looked around at the Mexican concept landscape, none of them seemed to be capitalizing on the health menu option trend, one that made the top 20 by the National Restaurant Association since 2009. He also created a skinny margarita recipe and offers baked or wheat chips for those looking to join the fun, but watch the waist line.  

Urdiales is also an active user of social media to promote his restaurant and engage with his customers about new items, specials and events.

“This contest gives me something positive to talk to my social media followers about. I get to encourage them to vote for their favorite recipe and also share the benefits of eating Louisiana seafood that’s prepared in a healthier way,” he said.

Jr. Food Critic shares thoughts on healthy eating

The Louisiana Restaurant Association's recent A La Carte magazine featured four Q & A style articles designed to provoke, and perhaps inspire restaurateurs, to consider their own meal choices and what they offer on their menus for their health conscious patrons.

The National Restaurant Association launched Kids LiveWell last July and has seen an outstanding number--96 to date representing 15,000 locations--of restaurants sign on and commit to offering parents and children more healthful options and information so they can make choices that are right for their families.

Twelve-year-old Michael Prados launched his blog, jrfoodcritic.blogspot.com, three years ago. It features his dining adventures, both in restaurants and at home, and has garnered attention from local Baton Rouge media and delivered some 57,000 visitors to his site.

Prados shared what's important to him and how he balances his dining out with his desire to be healthy.

ALC: What are your goals as Jr. Food Critic? JFC: I love food and consider myself a foodie. I love to cook and to eat out in restaurants across the state with my parents. The site allows me to share the meals and experiences with others.

ALC: What are some of your preferred healthy items?
JFC: At each meal, my family includes a meat, a starch and vegetables. I really enjoy broccoli and asparagus, as well as spinach salads. At school, we have a salad bar so I try to eat salad often.

ALC: When you dine out in restaurants, are you conscious of ordering healthy menu items? JFC: Yes, I try to consider the healthy aspect of what I order. However, I don’t eat out but once or twice a week, so I do splurge on some things that don’t fall in the healthy category.


ALC: Do you think that restaurants do a good job offering healthy menu options? JFC: Yes, I do. It really just depends on what someone orders, but restaurants do offer healthy options.

ALC: What else do you do to live a healthy life? JFC: I work out three days a week with my dad at 4:30 a.m. Because he’s so busy with his job and I’m busy with school, getting up early and getting our work out in is important and something we do together. I’m looking forward to going to camp this summer and there’s a big focus on being active and eating healthy.

Do you consider the healthfulness of the food you eat? Are you more conscious of your caloric intake now than in previous years? Does your age factor into what you consume?

ProStart student weighs in on healthy eating

The focus on healthy eating for Americans and particularly young people is at an all-time. The Louisiana ProStart program curriculum includes nutrition as part of a participating student’s coursework. We asked a few of them to tell us what they thought about healthy eating—at home, school and in restaurants.

Meet Braiden Grzych. She’s a ProStart student at Fontainebleu High School. Braiden shares with us her philosophy on why being selective about what she eats has helped her become more energetic.

ALC: Would you mind sharing with us why you are interested in healthy food choices?

BG: About three months ago I noticed I was exhausted fairly often, and not in the best shape, so I decided to get healthy. Even though it was hard, I knew that eating healthy would make me feel more lively and all around have a better lifestyle.

ALC: How has your ProStart experience helped you gain a greater awareness of healthy menu choices?

BG: ProStart has made me question anything I order. I make sure the food will benefit my body rather than harm it because of the amount of calories, fat, sugar or cholesterol. I definitely pay much more attention to fulfilling my body's daily needs such as fiber, protein, vitamins, minerals and carbohydrates.

ALC: How important do you think it is for restaurants to offer healthy menu items?

BG: I think it's extremely important. As a teen, I am completely aware of the media and the advertisements always saying to get fit, go play and eat right. Yet, restaurants rarely seem to give a vast choice of healthy options, so it's hard to make the right decisions while dining out. Also, with the public growing more and more aware of how healthy eating benefits the body, a restaurant offering healthy menu items would definitely get plenty of business!

ALC: Do you feel if the server offers healthy side items in place of or in addition to other less healthy items, you are more likely to order the healthy item?

BG: Yes! If the server offers something healthy I do a bit of a compare/contrast of the benefits in my head and I choose the healthier option. Plus, it makes me happy to know I'm making a wise decision so the dining experience is more enjoyable!

ALC: What are some healthy items you like to prepare?

BG: I love to make fruit salad, veggie wheat pizza, grilled asparagus, and a veggie pasta, with wheat noodles.

ALC: Are you conscientious of the healthfulness of foods you order in a restaurant?

BG: Yes I am. I always pull out my phone and Google the ingredients and how they affect the body, unless I already have knowledge of the ingredients from information I've learned in ProStart.

ALC: Have you had the opportunity to influences the choices of your peers?

BG: Yes! I've actually gotten two of my friends to cut out the sweets and fast foods by giving them a few healthy and delicious recipes. Once they realized healthy food actually does taste good and make their bodies feel better they were convinced!

ProStart is adminstered by the LRA Education Foundation in Louisiana and currently nearly 50 high schools offer the two-year program, which is designed to attract young people to careers in the restaurant industry.
